Banana Bread Muffins

What you will need…

1½ cups flour

1 tsp baking soda

1 cup sugar

½ cup butter

2 eggs (beaten)

4 bananas (ripe and mashed)

Pinch of Salt

1 tsp vanilla essence

2 tbsp cocoa shavings

How to…

1. Melt butter and combine with sugar
2. Add eggs, bananas and vanilla essence to the butter and sugar mixture. Mix well.
3. In a separate bowl, sift flour and combine with baking soda, salt and chocolate.
4. Combine the wet and dry ingredients. Mix well.
5. Portion the mixture into a greased muffin tray. Depending on the size of your tray, expect to make +/- 12 – 16 muffins.
6. Bake at 350°F for about 25 – 30 minutes depending on your oven (when an inserted toothpick comes out clean, your muffins should be fully baked and golden brown)

Hot Cocoa

What you will need…

Cocoa powder

Milk

Sugar

Salt

Vanilla, cinnamon or a candy cane

Whipped cream and popped corn

How to…

1. Combine 2 tablespoons of cocoa powder with 1 cup of warm milk (or dairy free alternative)
2. Add 2 teaspoons of sugar (to taste) and a pinch of salt
3. Mix thoroughly
4. Try with a vanilla bean, a cinnamon stick or a candy cane for an extra treat
5. Top with whipped cream and chocolate drizzled or candied popped corn
